Banana Bread

Ingredients

1/2 cup vegetable oil

1 cup brown sugar

1/2 tsp. vanilla extract

2 eggs

3 to 4 large overripe bananas

3/4 cup milk

1 ¾ cup all purpose flour

2 tsp. baking powder

1/4 tsp. baking soda

1/4 tsp. salt

1/2 tsp. cinnamon

1/2 tsp. nutmeg

1 cup chocolate chips

1 cup roasted chopped walnuts (optional)

Directions

Preheat oven to 350 degrees Fahrenheit

Grease a 9 inch loaf pan

Use a whisk or hand mixer to blend together vegetable oil, brown sugar, vanilla extract, eggs.

Mash bananas together in a separate bowl with a fork, then add them to the wet mixture.

In a different large mixing bowl, add the flour, baking powder, baking soda, salt, cinnamon, and nutmeg together. Then whisk them together for about 30 seconds to ensure they’re fully combined.

Form a well in the bottom of the dry mixture, then slowly pour the wet mixture into the well.

Using a rubber spatula, gently mix the dry and wet ingredients together. Don’t over mix. It’s okay if the batter has lumps in it. Gently fold in the walnuts.

Pour the batter into your greased loaf pan.

Bake for 45 to 55 minutes, or until a toothpick inserted into the center comes out clean. If your loaf starts to brown too quickly, cover it with aluminum foil.

Enjoy!
