Lemon Loaf

Ingredients

1/2 cup vegetable oil

Zest of two lemons

1 cup sugar

2 eggs

3/4 cup whole milk

Juice of two lemons (about 1/4 cup)

1 ¾ cup all purpose flour

2 tsp. baking powder

1/4 tsp. salt

Directions

Preheat oven to 350 degrees Fahrenheit

Grease a 9 inch loaf pan

Zest two lemons, then add that zest to the sugar and mix together with your hands. Be sure to really rub the zest and sugar together so that you releases the oils from the zest - fully enhancing the lemon flavor.

Use a whisk or hand mixer to blend together vegetable oil, sugar zest mixture, eggs, milk, and lemon juice.

In a different large mixing bowl, add the flour, baking powder, and salt. Then whisk them together for about 30 seconds to ensure they’re fully combined.

Form a well in the bottom of the dry mixture, then slowly pour the wet mixture into the well.

Gently mix the dry and wet ingredients together. Don’t over mix. It’s okay if the batter has lumps in it.

Pour the batter into your greased loaf pan.

Bake for 35 to 40 minutes, or until a toothpick inserted into the center comes out clean. If your loaf starts to brown too quickly, cover it with aluminum foil.
