M&M Cookies
Sometimes, M&M cookies are the nostalgic treat you need. Bad day? Eat an M&M cookie. Got that raise? Celebrate with an M&M cookie! These treats aren't just for the kids. So go ahead. Treat yourself!
Ingredients
1 stick unsalted butter, melted
1/2 cup granulated sugar
1/2 cup light brown sugar
1/2 tsp. vanilla extract
1 egg and 1 egg yolk, both room temp.
1 ½ cups all purpose flour
1/2 tsp. baking soda
1 tbsp. cornstarch
1/2 tsp. salt
3/4 cup M&Ms (use 1/2 cup for the dough, and 1/4 cup to press on the outside of each dough ball, as needed)
Directions
Preheat oven to 350 degrees Fahrenheit.
Melt butter over medium heat in a small saucepan on the stove. Once melted, add the vanilla extract. Pour mixture into a mixing bowl and whisk in the granulated and brown sugar.
Add both eggs, and mix until combined.
In a separate bowl, combine flour, baking soda, cornstarch, and salt with either a fork, sifter, or whisk for 30 seconds.
Add the dry mixture to the wet mixture, and stir until almost all of the dry ingredients are absorbed by the wet ingredients.
Using a rubber spatula, gently fold in 1/2 cup of the M&Ms. This prevents you from overworking the dough, which will leave you with tougher cookies.
Form dough into large golf-ball-sized cookies with your hands, a cookie scoop, or an ice cream scoop.
Place each cookie dough ball on a sheet pan. They should be about two inches apart. Top with additional M&Ms.
Bake cookies for 8-10 minutes or until they start to brown around the edges.
Let cookies rest on pans for five minutes, then transfer to cooling racks.
Makes about 12 cookies.
