Sugar Cookies

Ingredients

1 stick unsalted butter, softened

3/4 cup + 4 tablespoons granulated sugar

1/2 tsp. vanilla extract

1 egg and 1 egg yolk, room temp.

1 ½ cups flour

2 tsp. baking powder

1 tbsp. cornstarch

1/2 + 1/4 tsp. table salt

1/3 cup sprinkles (optional)

Directions

Preheat oven to 350 degrees Fahrenheit.

With a hand or stand mixer on medium speed, beat together butter and 3/4 cup granulated sugar until the sugars are fully incorporated, about 3 minutes.

With the mixer still on medium, add vanilla extract and both eggs, and mix with butter and sugar until combined.

In a separate bowl, combine flour, baking powder, cornstarch, and salt with either a fork or a whisk for 30 seconds.

Add the dry mixture to the wet mixture, and stir with a spoon until all of the dry ingredients are absorbed by the wet ingredients.

Using a rubber spatula, gently fold in the sprinkles until just mixed.

Cover the mixing bowl and place it in your refrigerator for 30 minutes to an hour.

Form dough into large golf-ball-sized cookies with your hands, a cookie scoop, or an ice cream scoop and then place each cookie dough ball on a sheet pan. They should be about two inches apart.

Bake cookies for 10-12 minutes or until cookies are slightly browned on top.

Let cookies rest on pans for 10 minutes, then transfer to a cooling rack.

Makes about 10-12 cookies.
