Coffee Cake
This soft and moist vanilla cake is layered with a sweet cinnamon filling and topped with a delightful cinnamon streusel and a pool of vanilla icing. It makes a delicious breakfast or dessert!
Ingredients for the batter
1 stick unsalted butter, melted
1 cup granulated sugar
1 tsp. vanilla extract
2 eggs
3/4 cup sour cream
1 ¾ cup all purpose flour
2 tsp. baking powder
1/2 tsp. salt
Ingredients for the streusel
1 stick unsalted butter, softened
1 ½ cup all-purpose flour
1/4 cup light brown sugar
1 tsp. ground cinnamon
1/2 tsp. ground nutmeg
1/4 tsp. salt
Ingredients for the icing
1 ¼ cup powdered sugar
2 tbsp. milk
1/4 tsp. salt
Directions
Preheat oven to 350 degrees Fahrenheit
Grease or line an 8x8 baking dish
Use a whisk to blend together melted unsalted butter, sugar, vanilla extract, eggs, and sour cream.
In a different large mixing bowl, add the flour, baking powder, and salt. Whisk together for about 30 seconds to ensure everything is fully combined.
Form a well in the bottom of the dry mixture, then slowly pour the wet mixture into the well.
Using a rubber spatula, gently mix the dry and wet ingredients together. Don’t over mix. It’s okay if the batter has a few lumps in it.
Scoop half of the batter into your greased or lined pan. This batter is thick, so if you have trouble spreading it, spray a silicone spatula with cooking spray and continue to spread. Reapply cooking spray to the spatula as needed.
To make the streusel, add the ingredients to a mixing bowl and combine with a fork or your hands until clumps starts to form.
Add half of the streusel on top of the batter already in the pan.
Top streusel with the remaining batter, and then top with the remaining streusel.
Bake Coffee Cake for 20 to 25 minutes, or until a toothpick inserted into the cake comes out clean. If the top starts to brown too quickly, loosely cover your pan with aluminum foil.
Combine the powdered sugar, salt, and milk and stir until the powdered sugar is dissolved. Pour as much as you want on top of your cake.
Cut into squares. Makes about 9 servings.
