Strawberry Cream Cheese Frosting
This sweet and tangy strawberry cream cheese frosting is the perfect topping for my strawberry cupcakes. It’s made with a strawberry purée that’s thickened by adding cornstarch. This way, you will get lots of strawberry flavor in your frosting without altering the texture.
Ingredients
3 sticks of unsalted butter, softened
1 8 oz. block of cream cheese, softened
8 cups confectioners sugar
1 tsp. salt
1/2 cup juice from pureed strawberries
1 tbsp. cornstarch
1/2 cup cold water
Directions
Pour strawberry juice in a small saucepan and place over the stove on medium heat.
Mix cornstarch and water in a glass, then when the strawberry juice starts to bubble, pour a tablespoon of the mixture into the saucepan at a time until the it resembles the consistency of softened jam (aka not a liquid, but still stir-able). Set aside to cool.
Add butter and cream cheese to a large mixing bowl. Mix together for a few minutes on medium speed.
Combine salt with sugar for better incorporation into the frosting. Add sugar one cup at a time.
When adding sugar to butter mixture, first mix on low speed to avoid spillage, then medium to medium high speed to fully combine. Add cooled strawberry/cornstarch mixture. Mix until fully incorporated.
Use the frosting to ice cupcakes, cake, etc.
